CholesterolOne of the most important fat molecules in the body. Cholesterol is the source and cornerstone of many essential processes and systems in the body, such as the lining or insulating material of nerves and membranes of the brain, the formation of hormones, the formation of bile used in digestion and so on. Cholesterol was never conclusively shown to be the "bad guy" of heart disease. In fact, the longest living people in their 90's and 100's have been shown to have the highest levels of cholesterol in their blood! Another myth is that a high intake of cholesterol-containing foods will cause an increase in blood cholesterol. Since the liver makes cholesterol from fat in the diet, a high intake of dietary cholesterol will result in the liver reducing its production, not increasing it. There are many reasons for cholesterol to be high. Genetics plays a very important part in the process of producing it, converting it to the LDL or low density lipoprotein which carries the cholesterol from the liver to the tissues and is the one considered to be the "bad cholesterol", and HDL or high density lipoprotein which takes the cholesterol the other way from the tissues back to the liver and is considered the "good cholesterol". This Apo E4 gene is thought to affect about 20% of the population and is also considered of big importance in other conditions as diverse as Alzheimer's and breast cancer.
