Acid Indigestion/HeartburnAnyone who has ever eaten the "wrong" food has experienced heartburn and acid indigestion. The stomach is a fantastic organ of digestion of food as well as protection of the body from the many pathogenic organisms that enter through the gut via the mouth and nose and eventually swallowed. These attributes are provided by hydrochloric acid (HCl) produced by the enzyme carbonic anhydrase whose proper function is zinc dependent. Intensive farming and increased floods during the last three decades have resulted in depletion of many essential minerals including zinc. The ensuing reduction of HCl production has meant that the stomach could become more vulnerable to infection and inflammation which, in turn, will then even to react to small quantities of acid causing the symptoms of heartburn and acid indigestion. This situation is made worse by eating foods that require large amounts of acid to digest, especially that the lining has been irritated and inflamed by food allergy/intolerance. Antacids and acid reducing drugs may control the heartburn in the short term but will make the acid indigestion worse in the medium to long term with many serious consequences and far worse than the original symptoms.
